Uggani Puffed Rice::
Ingredients:
Puffed rice 4 cups
Onion 1 big
Green chillies finely chopped 2-3
Grated coconut 1/4 cup
Cashewnuts chopped 5-6
Roasted and ground Bengal gram (Pottu kadala/ Putana) 2 tablespoons
Curry leaves a few
Mustard seeds 1 teaspoon
Turmeric powder 1/4 teaspoon
Salt to taste
Coriander leaves chopped 1 tablespoon
Steps:
1. Soak the puffed rice in some water for 2 minutes.Squeeze out the water and keep aside.
2. Heat a pan with tablespoon oil.Add the mustard seeds.When they start to splutter, add the curry leaves followed by onion.Saute till they turn translucent.
3. Add the green chilies and stir for a minute.Add the chopped cashew nut and grated coconut.
4. Stir for another minute.Add turmeric powder and ground bengal gram, stir for a few seconds.
5. Add the drained puffed rice along with salt and mix well.Switch off heat.
6. Garnish with chopped coriander leaves.Ideally to be had with Mirchi Bajji.
